- Bay leaves: 2, fresh or dried

- Water: 9 – 10 cups
Soup:
- Olive oil: 1 tbsp
- Large onion: 1, diced
- Garlic cloves: 3, minced
- Medium carrots: 2
- Celery ribs: 2
- Shredded chicken: 2 cups
- Homemade chicken broth: 2 litres
- Egg noodles or pasta of choice: 200 g/ 6 oz
- Vegeta or other stock powder: 2 – 3 tsp
- Thyme sprigs, optional: 4
- Finely chopped parsley: for garnish
Winter Special Chicken Noodle Soup Recipe Instructions
Broth:
Step 1: The chicken should be put in a big pot. After adding the remaining ingredients for the broth, add enough water to barely cover the chicken (too much water = weak soup).
Step 2: Bring the water to a slow simmer over medium heat and cover with a lid. Then, with the cover on, reduce the heat until it is simmering gently. The chicken should be soft and easily removable from the bone after 1.5 hours of simmering. (Or use a slow cooker set on low for eight hours.)
Step 3: During the first half hour, scoop the scum off the surface once or twice.
Step 4: Put the chicken in the pan. Discard bones and shred meat. Save the remaining chicken meat for another use; you’ll only need half of it.
Step 5: After taking the carrots, celery, etc. out of the soup, throw them away.
Step 6: Optional: To make the soup healthier and more transparent, I remove the fat from the top by scooping it off after refrigerating it for a few hours until it sets.
Soup:
Step 1: In a big pot over medium heat, heat the oil. Cook for two minutes after adding the onion and garlic. Don’t let the carrots and celery brown; instead, simmer them for 5 minutes until they are soft and somewhat sweet.
Step 2: Increase the heat to medium-high. Pour in 8 cups of broth slowly, leaving residue in the bottom of the broth pot (fill up with water if needed).
Step 3: Add pepper, bay leaf, thyme, and vegetable powder. Stir.
Step 4: When it begins to bubble, add the spaghetti or noodles. Cook for a maximum of two minutes each packet. Just once or twice, stir lightly (Note 6).
Step 5: Stir in half of the chicken (it heats up rapidly), then season to taste with salt and pepper.
Step 6: Garnish soup with fresh parsley and serve right away.
