- Sea salt: to taste
For the stuffing:
- Olive oil: 2 tbsp
- Red onions: 2, peeled and chopped
- Breadcrumbs: 250 grams
- Macadamia nuts, roughly chopped: 125 grams
- Dried cranberries: 100 grams
- Rind of 2 oranges and juice of 1 orange
- Eggs: 2
- Salt: to taste
- Freshly ground black pepper
For the gravy:
- Onions: 250 grams, peeled and coarsely sliced
- Cumin seeds: A pinch
- Organic cocoa powder: 1 tbsp
- Clear honey: 2 tbsp
- Plain flour: 1 tbsp
- Red wine, preferably Merlot: 250 ml
- Turkey or vegetable stock cube: 1, made up to 300ml
Easy Christmas Turkey Recipe Instructions
Step 1: Set the oven’s temperature to 190°C on gas 5 and 170°C on fan. Apply butter all over the turkey and season with sea salt. Fill the cavity with the lemon pieces and rosemary.
Step 2: The turkey should be placed on top of the onion halves in a big, flameproof roasting tray. To make a foil tent, cover with kitchen foil and tuck beneath the pan.
