Dough:
- All-purpose flour: 2 cups
- Salt: 1 tsp
- Granulated sugar, divided: 2 tbsp
- Active dry yeast: 1/2 package (1/8 ounce)
- Whole milk: 1/2 cup
- Unsalted butter, softened: 2 tbsp
- Egg yolk: 1
- Vanilla extract: 1/2 tsp
- Pumpkin puree: 1/4 can
- Pumpkin pie spice: 1/2 tsp
Filling
- Packed brown sugar: 3 tbsp
- Granulated sugar: 1 tbsp
- Butter, softened: 2 tbsp
- Pumpkin pie spice: 2 tsp
- Chopped pecans: 1/4 cup
Glaze:
- Cream cheese, at room temperature: 2 ounces
- Butter, softened: 1 tbsp
- Icing sugar, sifted: 1/2 cup
- Whole milk: 1 tbsp
- Vanilla extract: 1/2 tsp
Pumpkin Cinnamon Buns Slow Cooker Recipe Instructions
For Dough:
Step 1: Apply cooking spray to the Crockpot® Slow Cooker’s insert. Place enough parchment paper down the bottom of the stoneware to reach four inches up the side. Apply cooking spray to the parchment paper and set it aside. Mix the flour and salt together and reserve.
Step 2: Mix the yeast, 1/2 teaspoon sugar, and 2 tablespoons of warm water. Let stand until frothy, 5 to 10 minutes.
Step 3: In the meantime, cook the milk and butter in a saucepan over medium-low heat until the butter melts and the milk is barely warm to the touch.
Step 4: Combine the yeast mixture, milk mixture, remaining sugar, egg yolk, and vanilla in the bowl of a stand mixer that has a dough hook attached. Add the flour mixture, pumpkin puree, and pumpkin spice until a soft, smooth dough begins to form (you may need to add up to 1/4 cup additional flour if the dough is too sticky).
Step 5: Move to a bowl that has been oiled. Cover and let rise until doubled in size, 45 to 60 minutes.
For Filling:
Step 1: Place the dough onto a lightly floured work surface. Roll out to a rectangle that is 9 by 5.5 inches and 1/4 inch thick. Mix the butter, granulated sugar, brown sugar, and pumpkin pie spice; evenly distribute over the dough, leaving a 1/4-inch border. Evenly distribute the pecans .
Step 2: Roll the dough tightly into a log, beginning at the long end. Seal seams by pinching ends. Cut into six 1 1/2-inch-thick pieces. Put the buns in the Crockpot Slow Cooker in an equal layer. Wrap a clean kitchen towel around the lid and gather the ends on top to absorb condensation and keep the buns from getting soggy. After 1 1/2 hours of cooking on HIGH, lower the heat to LOW and continue cooking for another 30 minutes or until the buns are set and cooked through.
Step 3: Buns should be carefully removed using parchment paper. Exit onto the cooling rack.
For Glaze:
Step 1: Cream cheese and butter should be beaten together until smooth using an electric mixer. Add milk, vanilla, and icing sugar and beat until smooth. Pour over buns.
Step 2: Serve warm or at room temperature.
