Step 1: Melt the butter for the filling first over a medium flame. Add onions to the heated butter and cook for 2 to 3 minutes.
Step 2: Cover the pan and simmer the onions on low heat for 10 to 15 minutes. Place a pot of salted water on another stove to cook potatoes. Warm the milk while the onions and potatoes simmer.
Step 3: Add the plain flour to the pan with the onions and heat for one minute. Then, pour the milk and whisk the mixture. Bring the mixture to a boil until it thickens sufficiently.
Step 4: To construct the filling, combine mustard, thyme, potatoes, and cheese in the thickened mixture. Transfer the mixture to a pie plate with a funnel in the middle and cool.
