- Chopped flat leaf parsley: 1 tbsp
- Chopped tomatoes: 1 x 400g tin
- Sun-dried tomato paste: 2 tbsp
- Chopped thyme leaves: 1 tbsp

Step 1: Turn the oven on to 200°C (180°C for fans) or Gas 6. A shallow 1.8-liter (3¼-pint) ovenproof dish is required.
Step 2: Heat the oil in a frying pan over high heat to prepare the chicken, mushroom, and spinach mixture. After adding the chicken pieces, quickly sauté them until they are golden but not done.
Step 3: Add the mushrooms, garlic, and chili and cook for a short while. Stir in the spinach until it wilts. In a small bowl, measure the cornflour and mix it with two tablespoons of water until it becomes smooth.
