Step 1: Slice the fruit into small pieces after draining the pears and saving the juice.
Step 2: After cutting the trifle sponges in half, sandwich the strawberry jam between them. Pour the sherry into a jug, adding enough conserved pear juice to make up to 150ml.
Step 3: Use the entire 150ml of pear juice if you don’t want sherry in your trifle.
