- Shredded Mexican cheese blend: 3 cups

Step 1: Heat two tablespoons of oil in a large skillet over medium-high heat.
Step 2: Add the onion and bell peppers and cook for 6 to 8 minutes, turning often, until the onion is transparent and the peppers are soft. Add the salt, cumin, and chili powder to the vegetables to coat them.
Step 3: The shrimp should be opaque and no longer pink in the center after 3 to 5 minutes of simmering while stirring. Remove from the heat and stir in the diced jalapeño and lime juice.
