Garlic Parmesan Chicken Pasta
Ingredients
- 8 oz (about 225g) of your preferred pasta (spaghetti, fettuccine, penne, etc.)
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Cook the pasta according to the package instructions in a pot of salted, boiling water. Once cooked, drain and set aside. Reserve about 1/2 cup of pasta water.
- Season the chicken pieces with salt and pepper. In a large skillet or frying pan, heat the olive oil over medium-high heat. Add the chicken pieces and cook until they are golden brown and cooked through, about 5-6 minutes per side. Remove the cooked chicken from the pan and set aside.
- In the same skillet, add a bit more olive oil if needed. Add the minced garlic and sauté for about a minute until fragrant, being careful not to burn it.
- Reduce the heat to medium-low and pour in the heavy cream. Stir the cream continuously, allowing it to simmer gently for 2-3 minutes.
- Gradually add the grated Parmesan cheese while stirring constantly until the cheese melts and the sauce thickens.
- Add the dried basil and cooked chicken back into the skillet, stirring everything together until the chicken is coated with the creamy sauce. If the sauce is too thick, you can add a bit of the reserved pasta water to reach your desired consistency.
- Add the cooked pasta to the skillet and toss it together with the chicken and sauce until everything is well combined and heated through.
- Taste and adjust the seasoning with salt and pepper if needed.
- Serve the Garlic Parmesan Chicken Pasta hot, garnished with chopped parsley if desired. Enjoy!
